How to unlock the Dark Horse achievement in Assassin's Creed Origins - Definitive Guide

Once you've visited the afterlife at least once, the earliest being Aaru, this horse becomes purchasable at the stables in Set-Ma'at, at the northwest of the map. The village is just east of the Valley of Kings tombs. It costs 5000 gold.

First, you will need to travel to the afterlife at least once, which is located in the Valley of the Kings. Then you can buy the Eternal Maw at Thebes Necropolis with 5000 drachmas.

To unlock this achievement you'll first have to follow the main story quest until it takes you to the Valley of the Kings and into the Afterlife for the first time, in Aaru. Upon completing the quest by defeating the Nefertiti Shadow, you'll leave the Afterlife. At this point, Eternal Maw, the horse you summon and ride in the Afterlife, will be available for purchase from the stable in the nearby town of Set Ma'at. It'll cost 5000 and will unlock this achievement as soon as you make the purchase.

The Eternal Maw can be purchased for 5,000 drachmas after you summon your horse in any afterlife, and the Eternal Maw should arrive instead of your horse, and Bayek must say a special phrase: "The stallion of Anubis? Is it possible to tame him, to tame him?"

I could be wrong, but it seems that the horse will become available for purchase after you visit the afterlife. I bought it after the murder of Nifertiti

Requires the Special Products skill. Otherwise, grooms and weavers will not display legendary goods, which is what the horse is.

The mount can be purchased in the nearest city (Set-Maat) after you summon it for the first time in any afterlife location.
