I assume he means Ford Escort RS1600 since that's the only escort i see in the game - and trust me, i know my escorts ; - but when i do what he said i am not racing an old Fiat, i am racing another Escort so not sure about that.
The track he recommends is quick so that's good. I would advise taking the Fiat shittiest car you can find, just do a race v 1 opponent, 1 lap, drive slowly (u dont need to win - let the other AI car go first) and then just coast around, it's a really quick lap and then chevo pops at the end.

Before the race during car properties setup (difficulty levels screen) set mechanical damage to any value other than zero. Without damage allowed the trophy cannot be achieved. I personally got the trophy with damage set to 50% but less might be appropriate as well. It can be done in any game mode I believe I unlocked at a carrier race. It is easier to try for it at a race with two or three laps. Either try it on easy and dominate early without contact and finish off clean or set AI to hard and stay back.
