Zeek is unlocked later in the game. You meet him 7 squares below the area with a cyclops door that shoots lightening. He will give you an item to dispell the lightening by that door. Clear out the cyclops area, beat the boss and return to Zeek to recruit them.
Killing the hidden gold knight repeatedly is the fastest of way to gain exp in the game, so farm that if you want to level him quickly. The knight appears after standing beneath the golden face for a long time. (It's the only gold room so it's easy to find)

For all the upgrade achievements, it might be best to upgrade from when you die, instead of finding Epimetheus on the map and upgrading there. I fully upgraded Algus from the map and the achievement did not pop. So I quit without saving and then died and upgraded there, and it did pop. So might be glitchy if you try to upgrade from the world map instead of death.
You'll find the Golden Armor enemy in the last room of the Tower Roots area. You'll need most of the items in the game to be able to reach him, along with the two optional characters Zeek and Bram.
