After the completion of Chapter II, The Pisces Temple, you'll be back to Harmonia. After a short sequence you'll be prompted with the tutorial about Main Jobs.
Open the Ascension Tree menu and underneath "Basic Job" now you'll be able to select a "Main Job" for any character.
