If you're playing on the easiest difficulty I wouldn't attack him when he's stunned. If you do he dies too fast before hitting enough statues to unlock the achievement. I just let the statues damage him and I just ran around activating the statues when I was able to, then lured him into them.

Oof didn't work I didn't even shoot nor melee him once I will reload the checkpoint and try again ok I tinkered with difficulty and on my 3rd try once I destroyed the 4 statues I thought I had to re do the 5th so I popped it back down to easy then hit him once with my melee and it immediately popped

Use of any "cold weapon" aka meal combat is allowed thought completely unnecessary and can prevent achievement.
What to do?
Just dodge it's attacks and when button for statues (pillars) goes green rise it and stand behind and let hedgie to crush it. Do it 5 times and that's it.
Just keep in mind that pillars folds down after 10s so little timing with hedgies charges is necessary.
