If I remember correctly I did this on level 3 the weird Tiki level. This one is the easiest alone in my opinion and the enemies aren't that difficult using just the pistol. Although the boss battle takes a lot longer its still extremely easy.

I got this by simply hitting start on a 2nd controller and playing with that controller (using upgraded guns and everything). I allowed my first controller to sit idle on its default single shot gun and I completed the Insect Invasion level with the 2nd controller instead and the achievement unlocked.

The single shot weapon is the gun you start with. You can get this on any level playing on easy. Just do not shoot any of the other gun pickups.
An extremely easy way to get this is to play with a second controller while your first one just sits there. If you have multiple people just don't ever shoot. You will get the achievement easiest this way.
