Whenever the opposing QB throws the ball, press "A" to switch to the closest player and then press "Y" to jump into the air. It may take a few tries, but you'll eventually get it.
To make sure the opposing QB DOES throw the ball, you can always use two controllers. Select "Cover" then "Prevent" for defense, and "Shotgun" then "Flags" for offense. Before you have the QB pass the ball, select the defender on the far right. Then with the QB throw it to your "B" receiver and it should go to your defender. Just tap "Y" to reach for it.
