Easy.
Go to Race then Circuit Race, Painted Deseert then Pick the track Big Bug Mesa then when you start just put it in second Gear and thats it Just race around no need to change gear.
Also make sure that you have the AI and Laps Set to 5.

If anyone doesn't know how to change to manual transmission, you go to Options>Driving Physics>Player 1>Transmission

Like it says in the description 'Finish 1st in a race with the AI and Laps set to 5 or more using a manual transmission.' Pick a track you feel comfortable with and set the AI and laps to 5 and also set the AI difficulty to easy (70%). Then start it up. Remember to change gears is to use the right thumbstick up (to go up a gear) and down (to go down a gear). The use of turning the camera angle around is disabled though.
