So, this was actually quite easy, did it first try and everything!
It’s important to understand a few things firstly, Grym can only be damaged when he has the “Superheated” condition, which he gains from being in lava. Secondly, Grym will only go after the most recent person that attacked it. So make sure to turn off attacks of opportunity and similar things. Before the fight I equipped 3 of party with my best bludgeoning weapons, and had them wait by the wheel that activates the lava. I then had a magic caster stand over by the lever that slams the forge hammer.
When Grym appeared, I had the group of 3 hit him with everything I could, and made sure to end with the caster hitting Grym. This makes it so when its Gryms turn, he’ll chase down the caster.
Using this I would alternate between pummelling Grym with the group of 3 & then blasting him with my caster, steadily wearing Grym down till he fell.

When it's in the lava, it's vulnerable to bludgeoning damage. It tries to attack whoever attacked it last, so hit it with a hammer, then shoot it from far away so it won't kill he hammerer.
Available through the Underdark: Grymforge map, the Adamantium Forge located in the northwest part of the map invites you to try your hand at smithing an item out of Mithral. Made a trophy for tactics in the first act. Here's how:
I went downstairs from the forge for Astarion, leaving the rest of the characters upstairs on the stairs.
He released lava (the golem becomes vulnerable to crushing damage) and simply everyone at the top showered the iron brute with objects with crushing damage - from all sorts of hammers and hatchets to simple torches. One throw does about 30+ damage, so you can handle it easily - you can drink a speed potion if you're worried. Astarion hid invisibly and moved away in case he had to deliver lava again.
