If you unlink a character from the group and get them caught, then when they are in prison they can just equip a weapon that the others are carrying. That's what I did, to speed up the digging process.

There are many opportunities to get arrested in Baldur's Gate 3, but the earliest and most "peaceful" opportunity happens in the Emerald Grove located in Act 1.
There are two children NPCs running a pickpocketing scam. Behind them, down the ladder, there is a hole your character can detect with a perception check. Enter the hole by either a) being a small race, b) being a druid and shapeshifting into a small creature, or c) using Gaseous Form.
Once inside, the "leader" of the children will have a short conversation with you and tell you you're not supposed to be there. If you refuse to leave, she'll begin counting to 10. Let her count down, without leaving, at which point she'll run to a guard and say you've been threatening the children. Let yourself be put in prison.
Once in prison, you can escape by performing an unarmed strike on the weakened wall. Jump from cliff face to cliff face, avoiding/disarming/destroying the explosive traps, and climb up the furthest cliff face. You should earn the achievement at this point, and you can return to your party by jumping towards the metal cage.

Inside the building on the first floor is the Warden, and behind her desk you will find many levers that control the cells. *Note — you can quick save here before doing the steps for the achievement and reload afterwards if you'd just like to get the achievement
You can take one companion, ungroup them from the party, and get them to steal something in front of the Warden. She will arrest your companion and they will be taken to a cell with no items. Next, you can kill the Warden (and perhaps the Eye if there is an eye in the building as well), and activate the lever for the cell where your companion is. As soon as you exit the cell as them, your achievement will unlock. Your companion's items will be on the second floor of the Warden's building (up the ladder) in one of the chests.

You can do it for any character, but with the story "Criminal" you will still get inspiration. Come to the goblin camp (one of the solutions to the main quest of the first act), attack someone in front of a crowd, you are put in prison, then break into the gate (there is an easy level of hacking, you need to pass an easy hack test), open the door and go out - you get a trophy and plus some inspiration for your character
