The developers of Baldur’s Gate 3 designed most questlines so that they may be completed in multiple ways. Thus, giving the players more freedom in how they approach situations. This guide represents one method that is confirmed to unlock this achievement.
When you reach the Tollhouse in Act 2, you will see a large golden figure patrolling the area. Save before interacting with her.
Then, walk up and talk with the Gerringothe Thorn, Accursed Keeper of Coin.
After which, you need to continue helping the collector see what has happened to her with something like “Says who? Seems to me there’s no one her to oversee you.” At which point the collector will destroy herself, unlocking the achievement, and leaving you with your prize.

Yep this worked perfectly for me. Only thing worth noting is that the two dialogue checks are quite difficult, so make sure you're leading with your most persuasive or charismatic character.

Before engaging in battle collect all the gold from the ground, unify all the gold and send it to camp. If you leave gold on the ground it will use it as bombs, if you leave the gold on someone it will be used again as a bomb but much more deadly.
This is a very doable trophy, but will likely require some savescumming. This trophy is not recommended on Tactitian / Honor mode.
** Required spells:
- Polymorph
- action surge helps
** Ideal companions
- shadowheart (polymorph)
- laezel (action surge)
1.) The toll collector is located in the toll house in the shadowcursed lands, in Act 2.
2.) She will be surrounded by lots of floating skulls and will not be hostile initially.
3.) Switch to Shadowheart and split the party from your main character so that shadowheart and two other companions can move freely without your main character following.
4.) Walk with your main character to speak to the toll collector (big lady in gold armor).
5.) While in conversation, switch to shadowheart.
6.) Use polymorph on the toll collector from a distance (reload save if polymorph fails). Once polymorph is successful, the toll collector should be a sheep.
7.) Switch back to your main character (still in dialogue) with the toll collector. (Note - the toll collector will not look like a sheep during dialogue). Select final option "Attack".
8.) The toll collector's armor is represented by 5 - 6 floating skulls. You need to focus down and kill these skulls in 3 turns or less (or however long the toll collector is in sheep state), in order to guarantee this trophy. (Note - this is where action surge helps. Laezel can kill 2 skulls per turn if she uses action surge).
9.) Once all skulls have been defeated, and polymorph ends, a small shivering lady (who used to be the toll collector) will appear with 3 HP.
10.) Hit the sad lady once and say hello to your shiny new trophy!

Don't know if it's a solution available after some update... however I haven't had to actually fight with her, just success a couple of persuasion checks...
After giving her 1 money, I've asked why she was collecting the gold and then suggested her she could keep the gold.

The Toll Collector or Gerringothe Thorm can be found in act 2.
Enter the Toll House (don’t worry the skulls won’t attack you) and on the top floor you’ll find The Toll Collector.
The way I handled this was to allow her to take all of my gold (though I’m not sure if this is necessary), wait for her to walk close to the opening in the wall, save, and then enter turn based mode and use thunder wave to send her flying outside.
She should either outright die, or be essentially one shot (I had to hit her with an Eldritch blast). If done correctly the achievement should pop.
The Skulls should disappear when she dies
There are a few other ways though!
You can kill the skulls, preferably from stealth, and for each skull killed you’ll weaken her. Kill enough and she’ll be exceptionally weak.
You could also polymorph her, then kill the skulls.

If your Tav is a monk, they get a couple of special dialogue options that can end this without a fight. Essentially, you point out that there's no reason to keep collecting gold when the town's gone and the Toll Collector vanishes in a puff of logic.
Otherwise, I've talked to a lot of people who've had some luck using spells like Repelling Blast to punt the Toll Collector off the tower to her death.

Good day. It turns out I combined the two top tips. The point is simple: with any rogue (for me it was Asterion), hit each shard once until the rest are scorched. After this, all the shards are teleported to the boss. If the skull no longer speaks, it means it is ready to die. Next, I turned on the turn mode. Shedeheart casts banishment (priest spell) on the boss and he disappears from this world for 2 turns. Well, then during this time my fighters solved all the skulls. Act 2
