Can easily be done in any encounter with atleast 3 enemies. Lock on to an enemy and parry with Left Bumper right before their attack hits you, when you get the parry animation quickly hit Right Bumper to do the post parry attack. Right Trigger should work as well, but since the light attack is quicker I used the Right Bumper attack.
The post parry must be the killing blow, you can weaken them first with normal attacks, or post parry a couple times in a row to get the killing blow. Not sure if you have to lock on to the enemy but it was easiest to lock on for me. The white specter enemies are easy to parry since they charge you and swing at you, and they don't take much damage to kill. It dosen't have to be 3 consecutive post parry kills, just 3 in the same encounter.
If your having trouble parrying just practice a few times without attacking, you will see an orange glow and here a sound when you successfully parry, it also knocks the enemy back some. Practicing a few times will really help get the timing down.

It seems that it must be 3 separate post parry attacks. I just accidentally killed 3 with one attack and it didn't pop.
