The Achievement requires you to get 69 stars, but it does NOT require them all to be from the original maps. I got this Achievement from several of the very easy DLC Batmobile race tracks. As long as you're playing the AR Challenge as the primary character, the stars will count toward your overall total.
Example; The 1989 Batmobile pack includes two one lap courses and two three lap courses. This Achievement popped for me after clearing one of the one lap courses when I was playing as the 1989 Batmobile because I was playing as the default character, in this case the default Batmobile.
Not only the race tracks, several of the combat challenge maps are of the hard to fail variety, one of Robin's maps is him fighting an infinite number of enemies, so as long as you don't die you have no time limit to get the score required for the three stars on that AR Challenge.
My advice is to not stress so much about any single map if it's giving you trouble. There's plenty more you can play.

it unlocks just after ivy dies, however its just AFTER the save point.. And if you die or game freezes before you get to next save point then it remains locked!
Option A. if its just happened and you realize it, log out, on your game save there is an option to load a previous save (2 last saved)
Option B. If you have played on since, like me you need to complete main game and load up NG+. Play through it nice and fast ignoring all side missions. Once ivy dies you will see save icon appear.. Then just after the AR challenges appear. Now get to your next save! opposite you should see/hear a murder you can investigate (creepy opera music) I would advise having Xbox not on 'instant on' too (cause of game freeze I've heard) Completely safe way of getting to a save point.
All 69 stars aren't too bad when you have tooled up bat mobile. (race/fight one is a fucker! and slumdog can be a pain) just follow the guide on here.
I wonder how people that have already beaten new game plus will solve this problem.
Unlike previous Arkham games, the stars you get on DLC challenge maps do count for this trophy. So if you're having trouble getting 3 stars for a challenge, don't get caught up on it. Just make sure you also do the Scarecrow challenges and you'll have up to 9 challenges where you'll only need 2 stars, or up to 3 challenges which you can skip completely.
AR Challenges are unlocked as your progress through the game, each challenge also has a unique unlock requirement. We advise that you check these unlock requirements as soon as a new AR challenge becomes available as some of them are quite specific and may not come up through casual play. It's also advisable to tackle these post game once Batman and the Batmobile are fully upgraded to make them a little easier. They can be accessed from the main menu to save you the trouble of flying all over the map to each location.
There are a total of 23 AR challenges and you will need to achieve 3 stars in all of them to unlock the achievement. The challenges are broken up into categories, shown below.
- Batmobile Race - 5 challenges
- Batmobile Combat - 4 challenges
- Batmobile Combo - 6 challenges
- Combat - 4 challenges
- Predator - 4 challenges
But an improvement point is given when you receive 3 stars for the first time on any character, but only 1 time for each test.
