The Achievement requires you to get 46 stars, but it does NOT require them all to be from the original maps. I got this Achievement from several of the very easy DLC Batmobile race tracks. As long as you're playing the AR Challenge as the primary character, the stars will count toward your overall total.
Example; The 1989 Batmobile pack includes two one lap courses and two three lap courses. This Achievement popped for me after clearing one of the one lap courses when I was playing as the 1989 Batmobile because I was playing as the default character, in this case the default Batmobile.
Not only the race tracks, several of the combat challenge maps are of the hard to fail variety, one of Robin's maps is him fighting an infinite number of enemies, so as long as you don't die you have no time limit to get the score required for the three stars on that AR Challenge.
My advice is to not stress so much about any single map if it's giving you trouble. There's plenty more you can play.

Has this been patched/changed? I have 49 stars in races, 8 from the original and 41 from an assortment of the DLC cars... do only some of the DLC cars count?

To get this trophy, you must collect 46 stars in the AR Challenges, which can be accessed in game throughout Gotham or by selecting it from the main menu. Keep in mind that this is any 46 stars, so you can get stars on DLC packs and those will count as well.
I highly recommend that you wait until you've purchased most or all of the upgrades available before doing this. Having extra functions to your gadgets will help with predator missions, give you more versatility during combat for higher scores, or allow you to handle situations more effectively in the Batmobile.
For those who have it available, I highly recommend doing the Scarecrow missions. Even though it says that it's particularly hard, I found it quite easy (though might be tough if you are colorblind!) These should be able to provide with a quick and easy 9 stars.
