As with other riddler trials, this one is connected with a race track that you have to beat 3 times in a row with less time available from lap to lap.
In the first 2 laps you can again manipulate the race by pressing
or 
make use of that whenever possible. Don't be afraid if you screw up several times, there is enough spare time in these laps.
As far as the time goes, I think this race is actually pretty generous if you do not get hit by riddler's traps.
Probably the only real challenge will be the third lap but if you have made it to the part at which you jump over one of his traps without screwing up (or just once or twice) you should be good. For me the first half of the 3rd lap was the difficult half.

Just to add to the above two solutions: if you’re really struggling with this, hit RB and drive in first person mode. It makes the third lap a whole lot easier.
