The first one I was able to do was called "Deep in the Mire". It was a quest in harm's way from the barkeep to go into the sewers. Accept the mission and make way to the far end of the sewers to fight the boss sludge mound. Complete the battle, then turn it in to the beast master to get the achievement.
There's another early on but I wasn't strong enough to do it called trial by fire. You will need 11 flint stones to make fire on the torches in the cave "Balefire Cavern Exploration area" located at the northern end of the Rushlands region. Then you can summon the boss and fight it but again early on it was tough for my characters. I went back later and destroyed him.

It wasn't popping for me. I tried MANY things. Eventually found a comment on a playstation website saying the pop is delayed for most people. If it isn't popping go into a dungeon and then exit. It worked for me.
