To access the 1000 HP Championships you first need to unlock it by winning at 100, 250 and 500 HP, this will entail you winning a 4 race, 6 race and 8 race championship before taking on the final 10 race Championship. You will also need a lot of coins as you will need to upgrade your car to the relevant level for each Championship requirement. You will need to do this for five Championships to unlock this trophy. Each Championship uses a different kart but you can choose the driver. Each kart handles slightly differently and each can take some getting used to. To be honest it seemed quite daunting at first but if you have finished Career mode then these races are fairly straightforward. Consider them as a way of getting a lot of mileage in for the Trans-Siberian trophy, get the trophy out of the way and then have fun racing in Career mode to get the better coin/mileage per track ratios for the final 2 grinding trophies.
