I don't think this is an automatic achievement unless you drive bad. I got this on Crab Cove Career Mode Chowder Bowl #3. Gulls are all over the place make sure you get the two at the start. You get rockets plus crabs pop up so you can go for those too. I just replayed this level until it popped and it didn't take long.

A number of courses are populated with seagulls, Paradise Beach and Crab Cove. Hit 100 of these cumulatively over a number of races to unlock this trophy.

Seagulls are on a few races like ‘Shark Harbour’ and ‘Paradise Beach’ to name a couple.

You can see how many seagulls you have smacked by going to the top of the screen and selecting the three green lines (which is your game completion and stats). If you scroll down to the bottom you will see the number on the right-hand side. This achievement does not have to be done in one race. However, you do need to finish the race for them to count.
