Beach Buggy Racing

This sounds easy and is something that you might do accidentally but is, in my opinion, a tricky trophy to get and one that can require a bit of planning on your part or the help of a second player. As it says you need to win the race and just before the finish line hit a chicken power up and end the race with a chicken obscuring your vision. I did this by getting a chicken power up and then placing it near the finish line on the first lap slightly out of the normal racing line and then making sure I was in first place on the final lap and going out of my way to hit the chicken coop as I crossed the line. A second player in splitscreen can increase the chance of getting the chicken power up and also double the chance of you hitting it and coming first with one on your face.
