How to unlock the Deer to My Heart achievement in Beasts of Maravilla Island - Definitive Guide
The Island Spirit is a large deer creature that you see upon arriving on the island. This first sighting is not a part of the achievement.
You can check your progress in the Island Spirit photo tab at the bottom right of the photo album. There are 4 pictures you need to take: one in each of the three areas and one at the end before the credits. (There is also Chapter Select after finishing the game just in case you missed any opportunities.)

I believe the first photo opportunity (Singing Jungle) is practically story related and is difficult if not impossible to miss. (I don't remember exactly, though.)
Glimmering River is trickier. After you get the otterdile to spit water on the Moonlight Glory plant and you elevator your way up to the higher ledge -- before moving off the flower -- look upstream towards the distant waterfall. You should be able to see it. If not, hop off the flower and walk forward until you are able to get the picture. If you move too close I believe it walks into/through the waterfall(?) and disappears.
The Painted Plateau sighting happens after the cutscene where the griffin steals your journal and collapses the stones to make a ramp. I recommend saving here just in case you miss it (the Spirit will disappear if you get too close). Stick nearer the outside edge of the path as you round the second turn (after climbing the collapsed stone ramp). You should notice the Spirit directly in front of you with plenty of room to spare as long as you don't go recklessly barreling around corners like I did.
The final photo op is after you reach the top of the mountain and after you get the pop-up prompt that asks you to wait, open journal, or finish the game. Select Wait and you can walk around and snap more photos. The Island Spirit is next to you. Snap a pic and you're done.

The frustrating thing I found is that if you retry a level it seems to delete the photo for the spirit so you have to remember to retake it. Especially annoying on the final stage as you have to take two pics.

I missed this in my first playthrough, but luckily, I did absolutely everything else, and even watched the final credits to the end etc. Then I quit and restarted the game, and went to chapter select, chose the mountain level, and luckily, everything was still unlocked, so I just ran through the level again, and the cutscenes etc. with the Griffon played again, and unlocked the mountain path, and I went slowly this time, and saw the Island Spirit and photographed it, which unlocked the last three achievements I was missing - Deer To My Heart, Master Photographer, and Professional Wildlife Photographer.
Overall it only took an extra 5-10 mins, at most.
