All the other behaviors besides Roaring are obtainable as you're climbing the mountain. (P.S. During the pillars sequence, whistling seemed to make the griffin Gust.)
However, you can ONLY get Roaring after you get the pop-up prompt that asks if you want to wait, open journal, or end your adventure (I may be paraphrasing because I can't remember exactly). Just select the wait option and you can walk around some more and snap some pictures.

I'm experiencing similar issues getting this achievement. I saved the game after playing through chapter 2 and it loading the start of chapter 3. When I loaded the game I was transported to the area where the griffin jumps you, skipping the trigger of the journal for chapter 3. The entries remained empty and nothing I tried got it to load properly.
I proceeded to beat the game and tried to get it to work through chapter select. Though the list did load with check boxes, even though I made photo's of the 4 behaviors, none of them are checked off the list. Probably needs a new playthough :(
