Not as tough as I thought, and can be done with custom rules.
Start a game with a Huge map and plenty of resources, and assuming you don't start on a heavily forested island, simply progress as you would without demolishing any forest.
You CAN demolish rocks, and you CAN use the WOODCUTTER to get wood, so there isn't much need to actually demolish any forest tiles.
Once you launch the spaceship, you'll unlock the achievement.

went through the game with this logic, didnt cut down any wood myself, did use multiple woodcutters, but no achievement...
