You will more then likely obtain this out of sheer luck. I suggest that you just play through endless mode continually until you get it.
A x8 Cascade is where you remove a set of blocks that in turn removes another set and does it 8 times in a row. Try to set yourself up with combo's where possible or avoid removing sets that may prove helpful later on.

Note my achievement didn't pop till after I ran out of moves in classic mode

When does the achievement usually pops up???, just when you get the x8 Cascade in game or after you played any game and review your score and stats???

This is purely luck, but your best chance to receive a x8 cascade is in the earlier levels. Try making combos near the bottom. Like I said, its purely luck and if you play enough, I'm sure you'll come across this one.
