The vehicle "Shattered Field" gave me a much easier time unlocking this achievement compared to the balloon bomber. If you didn't use it on an earlier level, the
button extends the pokey stick and 
lifts it up.

I’d second that. I’ve not tried a single flying machine in this game that flew well, I just don’t think there are the blocks or mechanisms available to make one that’s easy to fly.
‘Breadcraft Bomber’ is made as well as I think it’s possible to make a flying machine in this game with the tools available so it’s no disrespect to the creator but I tried dozens of times with it but just couldn’t get a result, got the achievement on the second try with ‘Shattered Field’.

I made a vehicle for use to get this very easily
Push cn_down to bring up the Workshop menu, push cn_RB to go to player created vehicles, push cn_back to bring up the search bar and search for "Breadcraft Bomber". Its a + shape flying machine with bombs underneath.
Use the cn_Y button to fly it up and let go of the button to drop altitude, use the cn_up to bank forward, cn_down to bank backward, cn_left to bank left and cn_right to bank right. Use the buttons
to drop bombs.
What i did was use the bombs on the buildings at the back with the wind turbine type things on top of them, make sure you are high enough above the building and drop a bomb, aiming for the middle should destroy it in one hit. Afterwards you can use the vehicle itself to crash on top of the smaller buiding and the small monument in the middle, also make sure to crush the villagers as well for extra points towards progress.
Dropping the bombs is a bit tricky to aim, but its easy enough to do when you get the hang of it

Search for "A SURPRISE!", fix the steering, drive close to the monument in the middle and press B.
