Start the game, go to the computer desktop (without exiting the game), change the date to something between 17th and 31st december (make sure the year is 2012), go back to the game and shoot 12 whitetails bucks.
Bam ! Achievement unlocked !
Make sure you change the date back to whatever the day is today !

For those that care about timestamps -- it's worth noting that if you set the date into the future, then you can get the correct timestamp. I just unlocked this achievement by changing my date/time settings to 31-Dec-2023 (currently 31-Jan-2023). Since you can't sync a future date, the achievement syncs with today's date.

Dumb achievement when the game releases in February, just changed the date to 12/25/12 (or between 12/17 and 12/31) and it unlocked. Can be done by just repeating a single trek over and over.
