Grind in local with a second controller. If you don't have one you will have to grind with an AI (boosting online will not be efficient as only one person can collect the coins).
You will need to grind much longer for distance than coins, so the map doesn't matter much, but I'd suggest either the 4th on the first row or the 1st on the third row (on some maps coins will fall in gaps as it opens but on these two it's not an issue). Use default settings except maybe slow map if you find you can't collect all coins quick enough.
If you want to get it faster, don't buy the hats from the last row (with a star in the corner) as they are not required for this.

Also note that the total amount of coins needed for the hats is as follows:
Base game hats: 680 coins
Snowflake (holiday?) hats: 50 coins
Star hats: 50 coins
As Kerman mentioned, only the base game hats should be required.

You do need the snowflake hats, but the star ones are indeed not required.

Best achieved by gaining enough coins in Local mode.
It *should* take 730 coins to purchase all the necessary hats. Only the hats on the first 5 rows are needed. Hats are purchased in the Swag section of either Local or Online play.
1. Choose Local -> Custom Game -> Create
2. Press
to go into Match Settings and set as follows:
Lives: 3
Victory Points: 50
Combat Power: any
Map Speed: High
Regicide Bonus: any
Press
then 
to save settings.
3. For the Playlist you will choose map 4, Keep on Rolling, under the first row of blue maps for Kasseltoon.
4. Start the match with
. Press to Ready Up and jump in the portal with both active knights to start the match more quickly.
5. Once the countdown for the round reaches 0 you can run along the path. Take the first turn to the upper left and you'll see the 1st chest on the right side of the track. It takes 5 punches to open a chest. Collect as many coins as possible and continue.
The 2nd chest is located between two fires jet waves.
The 3rd and final chest is just a bit further along near the upper edge of the track. Make sure to open this chest and retrieve the coins as quickly as possible.
By the time you've opened and picked up the coins your second controller knight should be dying by being off-screen for too long. The round ends immediately and a new round starts. Repeat this for as long as you like or until you reach the Victory Points to win.
