You need to use a move that is marked AR for armored while your opponent is attacking you (check your characters move list in the pause menu). If you do it right your character will flash red. Can be difficult to time using a second controller but should only take a couple of fights against the AI.

If you're high like me, you'll be playing local versus with a second controller because you suck at boxing games. For this one, use Viktor Drago as your guy, and some chump like Rocky Balboa as your second.

Get close, and push X with the second controller. Right after, press Y with Viktor. When you flash red and land a hit, it counts. With a good rhythm, once you figure out the easy timing involved, you can bang this out in one match.
