How to unlock the Rodeo achievement in Biomutant - Definitive Guide
The Gnaut should be the first mount you obtain while playing through the game. It just looks like a horse sized goat. There are many variants though which you can tame or purchase from villages, so any will do as long as it has Gnaut within its name.
Once you have one, simply press and hold down on and select your mount. Now press to mount it and ride it around until the achievement unlocks. If you've got multiple mounts, you can change which one you want to spawn from within the map menu.

But where are they? I've played almost three hours and still haven't found one

Once you take over your first outpost, you will be tasked with taking over more as part of the story.
As you are travelling between them you will come across a Gnaut that is under attack and you have to defend it.
As soon as you warn off its attacker you will learn how to mount it. Once you do, just run around for a couple of minutes and you will earn the trophy straight away.

Gnaut are the mounts in Biomutant. You will unlock one as a side-quest early on, or you can simply purchase one from any of the game's forts. You can also tame them in the wild by feeding them a fruit. 500 meters takes about a minute or two of riding to unlock, and then you'll likely find them to be fairly useless, especially if you increase your agility a bunch and see how fast you can run.
