All that makes sense is that the two you start with, excluding the Thirteenth Brother who is optional right before you get access to the pester, don't count. At some point I already had 8 demons. 6 plot and two optional. The trophy didn't drop. Dropped only after I got the 7th mandatory, so beat the game, don't worry.

To get the trophy you need to: upgrade Vasya to level 13 (there they give you a demon for level 7,9,11,13) and TAKE the demons from the prologue, 1 and 2 chapters into service. The total will be just 7, since the first 3 demons are not taken into account in the trophy. If you refuse the demons from the indicated chapters, then you won’t be able to collect them further, because for some reason the game takes into account exactly the indicated demons; it does not accept the demons from Chapter 5 at all.
