There is an enemy category called bird and beast. All you need to do is defeat 500 of this category of enemy. Grindy, but not hard. It should be noted that you should receive this naturally as you play through the game. This type of enemy is the most common and will need to be farmed for materials for crafting such as pelts and hides.
