As you wander about the map, you'll spot these clusters of gray pottery littering the ground. You can use 
to dash your way through them, which sometimes rewards you with items. These are the items you are required to smash for the achievement, which is not tracked anywhere in the game I could find.
Unfortunately, considering that the pottery could be in groups of three, five, or two-and-a-half, there's no accurate way of telling where you are in the process of shattering "many" of these "Root-infested vessels". I think it's around 50, based on some lazy accounting on my part.
