This is pretty easy. All you have to do is either press 
for the main menu or go to the little guy on the top of the hub and select versus. Then choose your two fighters and the two CPU fighters and beat them since they're already on normal difficulty. Doesn't work if the match is two controllers, it has to be one player and one AI.
