How to unlock the Headhunter achievement in Blitz The League - Definitive Guide
do it on quickplay - easy difficulty - quarter length - 2 minutes at the minimum - pick the ny nightmare for their speed, you'll need it to get to williams fast.
also, if possible select super clash code and/or super unleash clash code and go apeshit on the Dallas' QB.
In the 1st half, you should be able to get a few dirty hits by blitzing him almost all the day with the Crush plays. By the beginning of the second half, continue blitzing him.
Please be aware, I am sure you'll get the achievement if you Williams is knock out for X game(s). If you injure him for X quarter(s), I can't guarantee it will pop the achievement for you.

I can confirm that knocking Julius Williams out for X quarter(s) will not get you the achievement. It need to be x game(s). Thank you D3LTA 360 for confirming this.

I injured him for 3 quarters at the end of the game and it didn't count.

Play a five minute game against Dallas on easy difficulty with the Super Clash (CLASHY) and Unleash (BIGDOGS) Cheat Codes on. Now Unleash on the Quarterback until he breaks. He must be knocked out of the game. If he is merely injured, or if they decide to Juice him and he returns you will not get the achievement.
I just got the achievement only a few minutes before writing this. Some things to keep in mind that may differ from the original solutions presented:
1. Quarter lengths should be 3 minutes at minimum versus 2. Julius Williams only starts throwing in a 3 linemen position at the very end, and only if you're in the lead by a good margin. I made sure I was at least 40 points up.
2. You can use your created team; if you have a good safety, use the Manvalanche tactics on him in the 4th (cover plays, blitz from the left holding RT and dirty hitting). He'll have enough speed to take him out. Personally, I used Terror, and used the LT and A dive combination.
3. Julius Williams takes a LOT of hits, being a Division 1 player. Make sure that Dallas does not have an Unleash stored, because they will use it to avoid a sack.
4. Watch your time. Because he takes punishment well, you may dirty hit him, but then have to go back on offense. If this happens, run backwards for a safety, kick it, and restart the process. Remember- your best chance is in the 4th, so not much time to work with.
5. The actual injury can be a pain. Some players were reporting that even if they injured him, because he wasn't out for a game the achievement wouldn't pop. Maybe I just got lucky, but I got a 3 play injury and it still popped. If you can injure him in the final seconds, and he doesn't return, the achievement should still pop. This game is buggy, though, so hope for a harsher injury.

Julius Williams is the quarterback and team captain for the Dallas Aztecs, and he's fast on the ground, which makes the achievement a bit tougher to get. To unlock this achievement you must injure him so that he does not return to the game. Use plays on defense where at least one linebacker blitzes often, and use dirty hits and UNLEASHED hits any time you get a chance to tackle him, as even if you don't necessarily injure him, you'll weaken him and make it more likely he'll get injured later in the game. However, it must be stressed that if you do injure Williams and he's able to be juiced or treated in order to come back into the game later, this does not unlock the achievement. IT MUST BE A GAME-ENDING INJURY. It should also be noted that you must complete the game that he is injured in for the achievement to unlock, but you don't have to win the game.
Also, the further ahead you are, the Aztecs will go more and more to a one-dimensional passing offense, until they're almost exclusively throwing the ball every play, giving you more chances to hit Mexico and knock him out.
This can be done on Easy in Quickplay mode (you can go for this achievement while doing the Buffet Victory achievement), or in Campaign mode, as you will face the Aztecs TWICE in Division 1, as the challenge when playing Dallas the second time is to injure Julius Williams.
