Preparation is key for this. Try setting up a Skaven Gutter Runner like this;
(in order of preference)
Pass Block
Catch

Very Long Legs (Doubles Skill)
Extra Arms (Doubles Skill)
Set up a game against a Wood Elf team. Let them play the ball, and they'll usually attempt to move a receiver into scoring range, and pass to him next turn. At which point, your Super-Skaven can Pass Block his way to where he can intercept, and use the other skills to intercept. Throw the ball back into the Wood Elf half (select player, Y button, choose target) and repeat.

Honestly? I don't know, I didn't really play Blitz all that much, i'm an old-school turnbased fan, so I stuck to that. I haven't owned the game for over two years either, so I can't test it. I would assume it would still work, but that's just a guess.

Try to keep track of who takes the first interception. Keep them relatively close to the opponent players in your half. When your opponent attempts a pass, use the "Pass Skill" to make sure that same player is the one trying to take the interception (by moving them in the line of the pass).
