Need to hit the certain point threshold (85k) for each level to unlock. Those levels are:
1-2: Bear Hat
1-4: Fish Hat
1-6: Boar Hat
2-2: Deer Hat
2-4: Dog Hat
2-6: Bison Hat
3-2: Bunny Hat
3-4: Toad Hat
3-6: Crow Hat
Most levels you can hit the threshold using invincibility and just steamrolling as fast as you can.
I do not know if it’s possible to clear the boss stage and not receive their hat, but if it is just clear that point threshold to grab your achievement

I unlocked the dog hat with 88k as my score, which is an A- so the threshold is probably lower than 90
