How to unlock the Demonologist achievement in Bloodstained: Ritual of the Night - Definitive Guide
Just wanted to offer a tip for Monster #44 since he can be a bit of a... nightmare... just so you know this solution does include a bit of a spoiler so be forewarned!

A good way to defeat it really fast and easy is to run back down the corridor to the left. Once there jump on the platform above the crate. The demon will get stuck in the crate. From there just unleash you best directional magic. I used the one that makes appear a dragon head that breathes fire. I can't remember the name of it.

Would be nice if you explained what you’re talking about when you say “ Now, go trigger the bastard demon by sitting on the train seat and waiting for him to appear.” What does this even mean?

Completing the game will probably see you slay almost every demon naturally - all but one. Demon 44 is hidden on the train and is not available to be found on your first ride. After the boss, get back on the train and find the seat by a window in the second carriage. If you switch to a first person view looking through the window when you sit down, you've found the right seat.
Stay there for a while (it'll feel like a long time but it's just a minute or so) and eventually the demon will appear and initiate the fight. It's a tough one, so maybe leave it for last.

An easy way of defeating him is to spawn him, then quickly hop up on that platform between the train cars (just to your right). Once up there, use the spell Tepus Oceus (I know that's probably butchering the name, it's the purple spell shard that sends out seeker-type lightning bolts for 50mp a pop). Spam that spell from up there and he'll go down easily.
Make sure you have the skill shard that gives a chance for you to use 0mp on a spell turned on/set as active. Maybe take a few ethers if your mp total is on the low side.

For the race with the ninja, I don't know if it's just lucky or buggy, but before starting I teleported myself behind the starting line (the ninja didn't move), I did the race to the finish line and I came back to touch the start line. This time the ninja started running but I got the sprint fragment and his archive after he won the race.

This is unlocked by beating every Demon at least once. The only one I had trouble with was O.D. I found a pretty easy way of beating him on YouTube. Use the Bolide Blast directional attack after shifting so he's on the ceiling. This will stun him and do a lot of damage in the process. Just keep hitting him with it, but make sure you're stocked up on mana regenerating items. I used lemonade and regular mana potions. I did not use any food on this fight.
Video guide for those having trouble understanding the location:
I'd highly recommend equipping Ring of Solomon (increased shard drop) & Infernal Breath (for an easy kill). As soon as it spawns, you can Invert, stick yourself in the corner and melt this one demon. Hopefully you get lucky with the shard drop too! Took me 2 tries to get that one.

I opened the map 100% and for a long time could not understand why some demons were still closed. Below is a list of those instances that I personally had difficulty finding/winning:
#044 - Kun-kun. Found on the train, return there after defeating the evil demon driving the train. You need carriages that have seats. If you don’t rush past them headlong (as I did), you will see that you can sit on one of the seats. Your character will look out the window and gradually fall asleep until he sees some kind of silver effigy in the window. That's what we need. Kun-kun puts a curse on the character and hits him quite painfully + he has quite a lot of HP, so I advise you to stock up on heals. Gives a fragment that increases resistance to curses.
#97 - Ravager. (See next paragraph) Found in the “Lair of Monsters”, in a location equipped for obstacle racing. To defeat him, you need to outrun him. I couldn't manage to do this during the story, so I left it for later. In the end, I overtook him using a time stop, which the secret boss kindly provided me with. (See next point). Gives a fragment of acceleration as a reward.
#127 — Orlok Drak, a secret boss that you can fight only after completing the story and performing certain actions:
1. You need to open the card 100%
2. After this, talk to the librarian and take the book “Tome of Conquest” from him
3. Move to the “Ice Tomb” location, having previously saved and purchased food and healing.
The boss hits very hard and has a lot of health. Beware of his grabs, jump and dodge when he becomes invisible or turns into a bat, otherwise he will sink his fangs into your neck and will not leave you until your character dies. As a reward you will receive a time stop fragment.

About "Kun-kun". His curse only works when you are facing him. The easiest way to kill: after he appears, run to the left, climb onto the boxes so that he cannot reach you and use spells, still turning away from him. I did this with a drill sword.
Orlok-Drak does not need a 100% map; he will decide to kill you for not returning the book to him.

Regarding the "Ravager": you can overtake it without first killing Orlok Drak. You need to put on the “Wanderer’s Belt”, which improves gliding, make yourself a high jump (the feather is farmed from the “Haagenti” bull) and put on the “Aegis-Shell” so as not to receive damage from traps.
In such a setup, overtaking him is not difficult.
