You can see the payments you have made toward credits cards under extras; both principle and interest. You can pay manually or allow a portion of your earnings from Pizza and Trucker to go toward it. The trophy popped for me after making a $200 payment which brought me to ~$3156 total, so you need to pay off approximately $3000 on your credit cards.

As you go through the levels and accumulate some cash, go to extras in the main menu and check out your credit cards and loans. As you pay down your cards, the achievement tracker will follow your progress. It pops after a few grand has been paid towards cards.
