How to unlock the 100 Monster Fights achievement in Blue Dragon - Definitive Guide
Crimson Drifter has pointed out the logistics of the achievement - two or more monsters in a fight, the monsters must be aggressive (names turn yellow) to one another - you do not need to complete the fight, only run away - and you can keep track of your records in your Battle Records. But I thought I'd add where I found to this to best happen.
The Lot Wilderness east has three monsters in it in particular that are agressive. Get there by teleporting to the Wilderness camp and walking out. The lot spans a good distance, so you may have to head in a bit to get a good setup. The Poo Snake and Ancient Katydid will fight eachother, as well as the Ancient Katydid and the Giant Rat - so if you accidentally kill one, or if you are training for xp as well, you only need to look for one of these pairs. It is much easier to find a match in the Wilderness here than anywhere else.
As stated, the best way is to initiate, flee, rinse and repeat. And the best place to do it is outside of the Wilderness teleport. Also, use stink if you are having trouble keeping the monsters close to you.

A monster fight is when you get 2+ monsters in your encounter circle and their names turn yellow. Initiate the fight and you will go into a monster fight.
Technically you do not need to finish each battle, but just initiate it. To finish this achievement quicker simply initiate the monster fight, then run away, rinse and repeat 100 times.
If you are doing it the quick way and running away, this will go towards your "Flee 50 times" achievement.
You can keep track of your progress in your Battle Records.

This isn't worth an entire separate guide, but I'll add that a good place to farm monster fights is right outside the Wilderness Camp in Lot Wilderness East (In other words, warp to the camp and exit past the save point). There's a Fat Rat and Ancient Katydid right there. You won't be bothered too much by other mobs if you don't have Stink on.
Obviously you can do it anywhere, but if you're not near a couple of hostile monster parties and suddenly have an itch to get this achievement, this is a convenient place to get to.

In that same area, just before the First Sheep Tribe Camp.
There is a Fat Rat guarding a chest.
Lure a Katydid near it, fight both, flee, then repeat.
Using the rat thats guarding the chest helps because it cant really move. This gives you much better control between batles.
If starting the 100 Monster Fight count from scrratch you just come here, do this little trick it should take about an hour and a half to get to complete. As your doing this, if you want to know how far along you are, its kept track of in your Battle Record.
Also, after the achievement pops, you can make a point to Not save `if you dont want to add 100 retreats to your battle record.

The above mentioned guides will work as well, but here is another one I found that works just as well. This can be done as early as disc 2 if your patient and willing.
When you enter the circular room in which if you fight all the double lance enemies for the Mystery Part Beta as you ascend you notice the white barrier chest. The Gnashing Imp Trap and the Fat Rat Pack are enemies, this small space allows you to consistently run away and create a Monster Attack at your own leisure.
