You will quickly notice no matter what weapon you buy you will do next to no damage. Open your inventory and you will discover the game has given you a new sword without telling you. It will do 100 damage to the boss per hit.
After that it is just a matter of spamming roll to avoid damage.

The third and final boss you will encounter.
Stage 1: The mage will shoot fireballs (5 times) so dodge these untill you see he is stunned. Hit him 4/5 times and walk away.
Stage 2: He will get two friends to join him shooting at you. It can be tricky to dodge all of them but try to time it. I counted 6 shots, then he is stunned again. Also you can't hit him 5 times anymore otherwise he will hit you and you will die quick. Try hitting him 2/3 (maybe 4) times then run away. Rinse and repeat.
After defeating it you will get this trophy.
