How to unlock the Invulnerable achievement in Bright Memory: Infinite - Definitive Guide
The fastest way I found to grind this was on the level “Close Call”.
You can select this mission from the chapter select on the main menu.
Shortly after a few rooftop gunfights you’ll drop into a small courtyard area that will have a few regular enemies and a shielded enemy.
Shoot your regular enemies but keep the shielded enemy alive as you’ll be using them to grind counters.
They’ll try to attack you with their baton and you can counter that with RB.
They’ll keep trying this attack and you can keep countering it.
They will not die from your counters, keep going until you get the required amount needed for the achievement.

I did it on the stage with the reed field and the boars. Kill the first boar one and then spam rb with the second. It it attacks fast. Counters nearly every other second.

This works perfectly, only thing I'd add is that the timing of the counter can be completely ignored if you just spam RB. I got this in less than 5 minutes and the spam strategy only let 1 or 2 hits through.

To counter, you'll need to raise your sword with just before an enemy melee attack is about to hit you. If you've done so correctly, the attacking foe will be staggered, opening them up to a counter attack. During a single playthrough, you'll effortlessly bag fifty of these, meaning you'll probably need at least two playthroughs to accumulate 100.
