If you're looking for a solution, the walkthrough will provide a great help with that. I did want to point out one odd issue I came across.
While I was doing this achievement initially, I had the "Palm Tree" joke but, when I tried to talk to the tree, the unique dialogue didn't pop up. I reloaded a save from just before talking to him and listened to every bit of dialogue that is outlined in the guide and I wound up getting a new joke, with the prompt at the end for the achievement.
Just wanted to put this there for anyone struggling to get it.

Looks like I'm going to have to restart the game to get this to pop, I also got the palm tree joke but I've not got a save game far enough back now.

This trophy is missable. During Act 2, Shay will need to tell a great joke to the Talking Tree. Once he has told a great joke and the Talking Fish has fallen from its branches, talk to the Tree again. You can pick any conversation option and you will get the trophy once you end the conversation.

In Shay Act 2 after telling the Tree a successful joke, talk to him again before picking up the fish and you should be given an opportunity to follow up talking about your joke. In my case Shay asked whether there was a First National Tree Bank. Once the conversation ends, the trophy will pop.

Guaranteed to get it if you tell a joke about "First Tree Bank" beforehand.
Definitely doesn't work in the case of "What's the smallest full-grown tree you ever heard of?".
