How to unlock the Overkill achievement in Brotato - Definitive Guide
Use Jack for this achievement. He can do +75% damage against bosses and elites, and +200% materials dropped from enemies.
The only weapon you need is the laser gun. Use your money to prioritize leveling up laser gun, Damage and Ranged Damage. There are many items that can also increase your damage and ranged damage, such as Gentle Alien. You can also invest a little in your critical hit rate, which will cause nearly double the damage. In the late-game, you can dish out a hefty 1000 damage per hit.

Not unlocking on both PC and Xbox for me. Is the paid DLC required for this achievement?

won't unlock for me either, I don't have the dlc
EDIT: btw this is the only achievement that has the same art background as the dlc ones, pretty sure it wasn't supposed to be listed under the title update ones

This is incredibly easy to do with Sailor, one of the new DLC characters.
They do +200% damage with Naval weapons against cursed enemies and one of the starting Naval weapons is the Trident, which does +80% damage against targets above 80% health.
I was hitting the basic enemies for 1500+ damage about halfway through the run.

This is a huge amount of damage, but I somehow managed this on my first run, even just using Curious. I ended up with a Sniper Rifle against the final boss and it was doing critical damage over 1000, apparently. I say apparently because my range was so high that the boss was hit and died off screen, so I couldn't see the damage number pop up.
However, for this, you just want to dump all your stats into Damage and then whichever type of damage your build is (ranged or melee). I feel like the Ranger character is also a good one to use for this achievement. While it's probably possible to boost your stats enough to get this with normal weapons, keep your eyes peeled for red and purple weapons in later wave shops that may be slower but have much higher damage output (rocket launchers, swords, sniper rifles, etc.).
Here's a (probably largely useless) video of me getting this as Curious against the boss on Wave 20. At least you can see my stats in the shop before the wave. My Damage was only at 24%, although my Ranged Damage was at 24 too. My Crit Chance was also decent, at 32%, which you should also go for since you'll definitely need to crit to get over 1000 damage.

Update: I ended up doing this far more reliably as Chef. One of his traits is +200% damage to burning enemies. He starts with a Scared Sausage, and I just used Cacti Clubs to proc it with the projectiles. I went all in on Melee Damage and Crit Chance, and when I would crit a burning enemy, I was doing over 1200 damage. Below is a clip of that, followed by a clip of the final boss fight. You can see multiple hits over 1000 in the first clip. It's harder to tell in the boss fight clip, but each of those yellow damage numbers is over 1000 too.
