You will meet beffica early on in the game on the way to Snaxburg. A bit later you can complete a quest for her called dig the dirt as part of the questline to get her to return to snaxburg. Once this is complete and she leaves for town, walk into her cave and the diary is on the book case at the back. Its a big purple book. Simply pick it up with X to collect it for the achievement

After moving Beffica back to Snaxburg, return to her cave. Her diary will still be there, but in trying to pick it up, you'll find that it was a decoy all along. This will move from the cave to her room after.

Once you convince Beffica to return to Snaxburg go back to Garden Grove. Inside Beffica's cave is her diary. Grab it for an achievement.

It's going to be sooooo hard to miss Beffica and she'll sass her way into your memory but just in case, she's the purple Grumpus you meet after feeding Wambus the Fryder, Shishkabugs and Bunger (near the start of the game). Inside her cave, on a little shelf, is her diary. You won't be able to pick it up until you finish her quest line to get her back to Snaxburg, though. Once she’s back in Snaxburg, head back to Garden Grove and go inside her cave. Pick up the diary and the trophy will unlock.
