A large amount of these you will collect through normal story progression and side quests throughout the game. I recommend finishing all side quests first anyway as it will benefit during the last mission. After beating the game you are set back to before the final mission so you can keep collecting anything you missed.

8 of these will be caught during the Legendary boss fights which you will come while completing sidequests. Each boss has a smaller and final unique snak to collect, the smaller ones being somewhat missable but you can replay the boss fights later.
