I've interviewed everyone 12/12, as stated in the Quests tab. I've defeated all Legendary Bugsnax, and completed all side quests. Those achievements unlocked.
This interview achievement has NOT. I'll finish the main story now and see if anything happens.
UPDATE: Fixed it.
Restarted the Xbox and game. The "quick resume" feature screwed up the achievements unlocking properly.

After you get back to Snaxburg, Lizbert won't be available for an interview yet but since you'll have your “new” journal, you'll be able to interview all of the other Grumpuses. You must return them to Snaxburg before you can interview them, though (see Got To Catch Them All
). You can check which ones you've interviewed already by opening your journal and going to the Grumpedia page (the 2nd tab). If they have an "Interview Notes" section, you've already interviewed them. When you can, exhaust all the questions available in your journal with each of them. The list of Grumpus' you can interview are as follows (in roughly the order you'll be able to interview them):

The glitch for this trophy comes from not necessarily needing to interview all of the Grumpuses. If you interview all of the Grumpuses except for the ones that give you a Video Diary-related item (Beffica, Floofty, Chandlo and Shelda), there’s a chance the trophy will unlock once you’ve interviewed Eggabell (so long as you did Filbo, Wambus, Gramble, Triffany, Wiggle and Cromdo beforehand, of course). We are fairly certain this is not supposed to happen so it’s highly recommended you just interview them all since it’s required for a quest anyways.
