This is an offline achievement and only needs one controller.
At the main menu, hit "Start a Party" instead of entering the game. Set the players to 2. Set the rounds to 1. Choose "Stunt" instead of random so that you'll hopefully get an easy one like landing a simple jump or doing a flat spin. Complete the task with both players and then back out to the main menu.

2 Players and 1 round. Select Stunt Type and dont Crash in both trys. YOU HAVE TO EXIT TO THE MAIN MENU FOR IT TO POP AFTER YOU DID IT!
