As with billboards and smashes, I think the Burnout Wiki's walkthrough is the easiest. It has screenshots of each jump as well as a text walkthrough that takes you from jump to jump.

You can click on a screenshot to have it pop up in a modal. Unfortunately, unlike the other guides, the screenshots don't have the HUD, so there's no minimap to help orient you.
Like other collectibles, you can see your regional count by hitting Start and scrolling down to Discovery. Each region of Paradise City has 10 jumps, and this way if you're late in the game and already have all 10 jumps in a given region, you know you can skip it.

Superjumps are marked with blue cones and lights (as of 1.6 update+). Basically find all the jumps and air over each jump and land them.
