I just thought I would offer my two cents on this. This achievement is pretty self-explanatory on what to do, and there is no easy way around it, because this requires an equal amount of luck and skill.
However, with that being said, I was able to find a strategy that seemed to work very well for me, and in using it, I was able to knock out my last four takedowns (Depot-lition, Rock the Clock, Stairs in their Eyes, and Take-Out Takedown) in about an hour.
I call it the Babysitting strategy. The term was coined for Need For Speed Carbon (can't remember by who), but the name just fits for this as well, as you are essentially sitting back and watching the last few cars, hanging back just enough so that they stay with you but not far ahead enough for them to use their nitrous. Anyways, what you want to do is use a fast car (I chose the Xbox 360 car, because of its fantastic handling and blistering speed), and pick whatever race your takedown is available on.
When the race starts, drive like normal for a bit, but don't use any nitrous. Make sure that you stay near the middle of the pack, not too far behind, and not too far in front.This will allow the other cars to catch up to you, and will begin their typical sideswiping of you, etc. Now, when this starts to happen, and you begin to near the Takedown location, let off the gas, so that your car slows down to around the 120 mark or so; the other racers around you will follow suit, and will actually slow down to stay with you.
Granted, not every car will do this: In races, whoever had first seemed to just take off, as well as second. But everyone else slowed down with me, and this made setting them up for a takedown in a certain area MUCH easier. As long as you don't use nitrous, they typically won't either, and will continue to rub paint with you, etc.. In Road Rages, everyone seemed to hover around me, and no one took off blindly ahead. When you get to the area of interest, e.g. the bus depot, clocktower, etc., this is when you want to slam on the nitrous and do whatever you can to smash one of the slow moving computers.
This is why you want to use a fast car, since a better acceleration means more force behind a hit when using nitrous. The poor computers, since they are moving so slow, get pinballed when you boost into them, and become significantly easier to launch into something. Granted, this will still take several tries, as there is still a ridiculous amount of luck and frustration that goes into this, but by doing this strategy, I was able to finish off my last few takedowns with relative ease.
This was my first guide, and I hope that it was clear and descriptive enough for someone to benefit. In short, when you start to get near where a Signature takedown needs to take place, let off the gas and cruise around 120 or 130, and this will allow some of the other computers to slow down and to swarm around you. You can then bump into them and move them into position, and then at the last possible second, slam on the nitrous and try and force them into the wall, pillar, etc.

EDIT: Forgot to mention this, but the earlier the rank a race is available on, the better. As the ranks go higher the AI gets better and faster, so picking the lowest rank possible when attempting a race is a small way to help yourself. I was racing in the Insane rank and my strategy still worked, but still, it can't hurt to have some dumbed out AI racing against you XD

I like your method and it would work but how the fuck do you lure them into a shortcut. Every time I try I end up taking them down trying to force them into the shortcut

Tips:
1. Most of these takedowns are easier to be done on "Road Rage" mode since its easier to takedown other rivals on this mode.
2. Sometime choosing a slowest car or driving slowly really helps with hardest takedowns or very specific ones.
In general you should be able to get most of the signatures by just playing the game normally so dont bother going for them any sooner.
