At the end of this mission you'll get out of the base in a vehicle. You'll be at the turret. By pressing the Y button you can switch between a grenade launche and a minigun. For the achievement you should stick to the grenade launcher.
After you got out of the base and past the first two parked cars you'll be driving on a frozen river. Using your grenade launcher you can create holes that enemy vehicles will crash into. While the achievement say you have to drop 8 vehicles this is not really the case. As long as they get destroyed by one of the holes you're golden.
Just try to shoot in front of the cars and snow mobiles. There will be dozens of enemy vehicles during this section so it shouldn't be a problem getting the 8 of them destroyed. Always aim in front of them and when you see them getting destroyed you already got one more.

This achievement is hard to miss. At the end of Mission 10: Clockwork, you’ll take control of a turret as you escape the plant. All you need to do is use your turret to shoot the ice in front of enemy vehicles and you will gain the achievement once you take out 8 of them, by having them crash into the ice holes. Make sure you aim in front of the enemies and time it so that you have easy shots during straight areas. Once you get 8 enemy jeeps or snowmobiles, you’ll get the achievement.

In one of the later stages in the level, you will be escaping on a jeep and operating the grenade turret. What you have to do is shoot the ice in front of the cars and make them crash. If all you do is shoot holes in the floor, then you will hit a lot of the cars that are far behind and out of view. When a car falls into the ice hole you will see half of it submerge and then it'll crash through the ice. Here is a video showing the method:
