How to unlock the That's Definitely Not A Knife achievement in Call of Duty: Vanguard - Definitive Guide
At the end of this mission you will be ambushed by the Stuka plane along with a bunch of enemies, use any type of weapon to damage the plane. Keep on doing this and eventually an enemy with a Panzerschreck will spawn. This achievement only requires you to get the last hit with either a Pistol or Bazooka, I wouldn’t recommend trying this with a grenade. I tried looking around for another Pistol in this area but couldn’t find one as I swapped it out earlier. There’s a few ammo boxes in this area with infinite ammo in them.
I got this on Veteran difficulty, but it would be easier on Recruit.

I was actually able to find a pistol from one of the enemies that arrived on the second truck

A guy in the second truck dropped a rocket launcher for me on this one.

This is a very finicky achievement.
As the description says, this is obtained in the mission ‘In the rats of Tobruk’ which is the 4th mission. After you destroy 3 tanks a plane called the Suka will spawn in and continuously fly over you until your shoot it down.
Surprisingly, the easiest way to do this is actually with a pistol rather than a rocket launcher as no rocket launchers in the WW2 era have lock on tracking.
The pistol I used was the one I started the mission with which is the magnum/revolver. At a guess I would say it took about 20 bullets of this revolver to bring the plane down and unlock the achievement.
I did it on veteran and the plane didn’t kill me once so it’s fairly easy it’s just a matter of hitting your shots when the plane flys straight over you. There’s ammo boxes in the area if you run out of ammo.

Bring the plane to a “burning state” and only then shoot from the pistol.

At the very end of the mission, a Junkers will dive at you; you need to shoot him down with your choice of pistol/grenade/bazooka. The bazooka will be “brought” to you by German reinforcements in trucks.
